Ice cold coconut water, simple syrup, and freshly squeezed lime juice are blended together and topped off with a splash of seltzer for a refreshing summer drink that’s loaded with electrolytes and vitamin C.

Sparkling Coconut Limeade

Thirst quenching, hydrating, and utterly delicious, you’ll want to keep this refreshing libation on hand throughout the summer months.

Transform it into a refreshing summer cocktail by adding a jigger of vodka, gin, rum, or tequila!

Be sure to use coconut water, not coconut milk

Ingredients:

  • ¾—1 cup simple syrup

  • ¾—1 cup freshly squeezed limes, plus additional limes sliced for garnish

  • 6 cups coconut water

  • 2 cups plain seltzer or club soda

  • mint sprigs

Method:

  • If you haven’t got any on hand, make the simple syrup by stirring equal amounts of sugar and water together in a saucepan. Bring it to the boil, then remove it from the heat and allow it to cool.

  • In a pitcher, combine the simple syrup with the lime juice and coconut water.

  • Stir in the seltzer.

  • Taste and adjust the sugar/lime juice/coconut water balance to your liking.

  • Place a tall sprig of mint in each glass and fill the glasses halfway with ice.

  • Pour the coconut limeade over the ice and serve with a slice of lime for garnish.
